Emergent Mataro
Wine
Aphelion Emergent Mataro is sourced from three vineyards running the length of McLaren Vale: one in each of Blewitt Springs, Willunga and the Sellicks Foothills.
Each parcel is treated differently. The Blewitt Springs batch is destemmed and cold soaked before fermentation. The Willunga fruit ferments with 50% whole bunches. The grapes from Sellicks are destemmed and fermented as whole berries.
All batches are matured in neutral French oak before the wine is blended and bottled with no fining or filtration.
Crimson purple, Aphelion Emergent Mataro is medium bodied, its powdery tannins a canvas for its red fruit and savoury character. Cellaring potential is 10 years.
